i have some jamaican close friends coming to remain, can any individual recommend a classic jamaican recipe for me to cook to impress them?

    Don’t let the amount of ingredients scare you. They’re all spices thrown into one casserole. Super easy! Enjoy!

    Jerk Chicken

    2 tablespoons garlic powder
    1 tablespoon ground allspice
    1 tablespoon dried ground thyme
    1 1/2 teaspoons cayenne pepper
    1 1/2 teaspoons ground black pepper
    1 1/2 teaspoons dried ground sage
    3/4 teaspoon ground nutmeg
    3/4 teaspoon ground cinnamon
    2 tablespoons kosher salt
    1 tablespoon granulated sugar
    1/4 cup vegetable oil
    1/4 cup soy sauce
    3/4 cup white vinegar
    1/2 cup orange juice
    2 tablespoons lime juice
    1 scotch bonnet pepper or 2 jalapeno peppers, seeded and chopped finely
    1 large onion, chopped
    3 green onions, chopped
    5 lbs skinless chicken pieces (on the bone)
    In a large casserole with a lid, combine all ingredients except chicken.
    Add chicken, stirring to coat well.
    Cover and refrigerate for 1 hour up to 24 hours.
    Bake@ 350 for one hour OR drain and barbecue.
    Serve with steamed white rice.

    This is definitely more involved but really yummy! The recipe comes from a Jamaican Restaurant.

    Jamaican Patties

    Filling
    1-3 teaspoon cooking oil
    2 stalks scallions, finely chopped
    1 lb ground beef
    1 medium onion, finely chopped
    2 tablespoons thyme
    1 habanero, finely chopped
    1/2 teaspoon black pepper
    1/2 cup breadcrumbs
    1/2 teaspoon salt
    2 teaspoons ketchup
    1 teaspoon paprika
    3/4-1 1/2 cup water

    Dough
    3 cups all-purpose flour
    1/2 teaspoon salt
    2 tablespoons curry powder
    1 cup butter or shortening
    3/4 cup ice water
    1 tablespoon vinegar
    2 egg yolks
    1 egg, beaten

    Combine flour, salt, and curry powder in work bowl of food processor, pulse to combine.
    Add butter or shortening and process until mixture looks like fine crumbs.
    In a bowl combine water, vinegar, and egg yolks.
    Add wet mixture to work bowl and pulse until a ball forms.
    Cover dough in plastic wrap and let rest in refrigerator for 1/2 hour.

    Preheat oven to 350 degrees.
    Mix together meat, scallions, salt, onion and 1 tablespoon of thyme.
    Place in the frying pan with a teaspoon of cooking oil and cook over medium heat until meat is cooked, about 10 minutes.
    Pour off excess fat.
    Add in breadcrumbs, the rest of the thyme, black pepper, habanero, paprika, and ketchup.
    Cook 15 minutes more, adding water as necessary to keep the mixture moist.
    Cool before filling pastry.
    Roll the dough out to 1/8-inch thick.
    Cut the dough into 6-inch circles or whatever shapes you want.
    Put filling on one half of the dough.
    Brush the edges of the dough with the beaten egg.
    Fold the dough over the filling to make a half moon shape and press the edges together firmly, sealing them with a fork.
    Place the patties on a greased cookie sheet and bake 20-25 minutes.
    If making cocktail size, cut the dough into 3-inch circles.

    Simple things like Jerk Chicken and Peas with Rice, if your experienced try a curry chicken or goat if it is available in your area.

    A real treat, is Ackee and Salt Fish, but that is a breakfast dish and is something you can try later on.

    use HAWAIIAN plantains, they are the short rounder ones. Cut them up and batter them with pancake mix and milk with a tiny amount of added suger. Fry in oil until dark brown.

    The pancake batter seals and makes the plantains turn to jelly as they fry. Your friends will be hooked forever if you make these.

    But only use the HAWAIIAN plantains. I can only buy these from the farmer’s market.
